In our home-brewing days, we made this one specifically for the Hong Kong winter. We are glad that the judges at Hong Kong’s first homebrew competition enjoyed it just as much as we did and awarded it the first place in 2013. We blend 6 malt types to impart rich notes of caramel, chocolate and coffee to this brew but at the same time we exercise some restraint to avoid making it overwhelming. We like the resulting balance that suits local winters that are cool, but relatively mild. We finish this beer with a blend of floral and spicy hops to round out the flavors.
