A robust bock brewed primarily with malted spelt (dinkelmalz) that lends body and baked bread flavors. The use of other German specialty malts elevate the base by providing aromatics of roasted chestnuts, chocolate and toffee.The use of Spalter Select hops balance the malt and alcohol character with tinges of herbaceous goodness. Naturally carbonated and conditioned for 12 weeks.

On tap at Tributary Brewing in Kittery, ME.
This one pours a golden dark brown color, with a small head, and some nice lacing.
This smells like toasted bread, nuttiness, a dusting of chocolate, and some herbal spice.
This is really a super solid take on the style, with a rich toasty and just slightly sweet malt character, and just a hint of hop bitterness.
This is medium bodied, crisp but rich, with very little booziness.
This is very smooth and such a good drinkable and such a good take on the style.

Enjoyed this on 06JUN22, from a bottle procured at Trib a couple of months back....
It was a deep and dark, clear mahogany-chestnut color. Had some ruby highlights when held up to the light. Topping was a lovely 1/4" layer of creamy, beige suds. Lasted well, with a slow ebb to a fine, thin layer, with great lace. Had a tantalizing malty aroma, with a great caramel-toffee combo. Was very smooth going down, with a soft and silky feel on the tongue, plus a medium-plus body.
Taste? Again, lots of malts! Love it! Was semi-sweet, with caramel, choco, toffee, plus some brown bread notes. The spelt added some nutty action to the mix, and it had earthy, lightly floral hop notes in the finish. Lovely! Prosit!

500ml bottle poured into a becher.
A: As dark as mahogany gets in color, with reddish tinges at the edges of the glass. Three solid fingers of billowing, pillowy and creamy beige head. Superb retention. Plenty of sticky lacing clinging in sheets and webs.
S: Lots of brown molasses, brown bread, crust, grain, toffee, and heavy toast. Ample whiffs of black berry and berry skins, and an almost concord grape-like impression. This is not estery fruity notes; it is coming from the specialty malt. Grass and hay in the background.
T: Follows the nose. Tons of malty complexity. Molasses and brown bread, toffee, toast, grain. Quite sweet initially, but it does dry somewhat on the back end thanks to great attenuation. Tight dark berry and black cherry malt tones. Distinct flavor of roasted hazelnut. Soft green grass and hay from the hops, but the malt is firmly in the driver's seat here. Toffee/molasses finish with a hint of chestnut.
M: Hefty in body. Solid sense of weight, but it is soft, velvety and lithe at the same time. Plenty of firm carbonation adds prickle and scrub. Pretty epic body, honestly. It's so obviously big and heavy, but it still drinks easily.
O: This is impressive stuff. It's great all around, but the body and mouthfeel are most memorable. It may be the biggest doppelbock I've ever had, and the body feels a lot more like a great imperial stout, albeit a very clean one. It's still very drinkable though. Perhaps a bit more "extra" than the German-brewed greats due to a more extensive use of specialty malts, but this is a great beer as it is.

Aroma is malt forward all the way with toffee and coffee. Maybe a plum sensation too.
Medium, smooth mouthfeel.
The taste is inherently sweet and roasty with a boisterous toffee malt forward. Semi-dry. Lingering finish. Pretty good beer for sure.
