This is a very unique beer. It started life as a saison, and then was barrelled with honey and wine yeast. When you first smell this beer, you get strong aromas of sourdough, tart fruit, biscuit, and a slight wine characteristic. Tasting it brings out those fruit flavours, with a very distinct sourness, and a lingering sweetness typical of beers with honey. It is very complex beer, with a lot of undertones, ranging from bready malt, all the way to white wine, and finishing with a bit of spice and sweetness. It only comes around once a year, but it is well worth the wait.
