This variant of Slippin' into Darkness Russian Imperial Stout uses cold-brewed Pecan Coffee from Independence Coffee Company and a touch of maple to give it a comfort flavor profile perfect for cooler holiday weather.

Pours a pitch black color with a finger width foamy head. Head retention is mild. Lacing is good. Aroma of roasted malts and maple. Same with the taste, but I get a little more pecan in there. Medium to heavy bodied with mild carbonation. Mild creamy texture at the end.

Pour is pitch black with a deep khaki head.
Nose is maple and freshly roasted coffee beans
Taste is a huge wave of roasted coffee, vanilla, maple. Light nutty character. Smooth coffee, chocolate in the finish. Excellent beer. Flavors are very well balanced. Nothing dominates.

Poured from a can into a pint glass
Appearance – The beer pours a nearly pitch black color with a small tan colored head of fizzy foam. The head fades very fast leaving a tiny bit of foamy lace on the sides of the glass.
Smell – The aroma of the brew is massive of a sweet maple syrup smell mixed with tons of roasted malt and a bit of milk chocolate. Along with these smells comes some complementing aromas of a vanilla nature as well as other sweeter smells of caramel and brown sugar. Along with these comes a hint of a nut smell as well as a little bit of booze, giving a very dark and sugary sweet (mainly maple) aroma.
Taste – The taste begins with a nice blend of heavy roast and sweet with the roasted malt flavors being composed of a mix of cocoa, coffee, and toasted malt and the sweet being predominantly of a maple syrup and caramel flavor. These flavors create a base taste for the brew and last throughout with sweeter maple and caramel getting even stronger as the taste advances to the end. All the while some char flavors and smoke as well as a little bit of a nut flavor develops balancing the sweet and dark flavors well. For a maple pecan stout the maple is big and the pecan is light, but overall the tastes were solid for the brew. At the end a little bit of a booziness as well as a touch of earth, one is left with a rich but smooth and robust roasty, warming, maple syrup taste to linger on the tongue.
Mouthfeel – The body of the brew is thick and creamy with a carbonation level that tis rathe low. For the rich dark and raosty tastes mixed with the sweeter maple syrup and light booze the feel is fantastic and coats the mouth in all the rich flavors making for a nice slow sipper.
Overall – The sweet ample and raosted and toasted flavors make this one a super tasty and rich sipper. While not too much pecan, the taste is overall very well done and makes this one a brew to search out if you have the opportunity. I look forward to checking out the other varieties of Slippin into darkness!!
