Bourbon Barrel Aged Baklava-Inspired Imperial Stout
This collaboration brew celebrates the Antikythera Mechanism, an ancient analog computer dated to 87 BC. Research suggests the device had 37 gears to track celestial movements and predict astrological positions and eclipses decades in advance. Reverse Engineering was brewed to mimic the flaky richness of traditional Greek baklava before it was fermented with Orange Blossom Honey and finished with walnuts, hazelnuts, and pistachios for a decadent, honey-drizzled re-envisioning of liquid dessert.

Look: very dark brown, some slight ruby highlights when held to light. Mocha head on the pour that mostly recedes. Oily, messy lacing.
Smell: probably an illusion of the honey melding with the barrel aged stout, but getting rich chocolate notes in the nose, nutty rich chocolate.
Taste: honey is prominent up front, then balanced with roasty notes, slightly bitter char finish.

Oily black with brown hints for the appearance, no head. Get wonderful honey dipped nuts, booze, chocolate, and caramel in the nose. Taste is disappointing however, honey is obnoxiously pervasive, leading to sweet saturation of the palate, bourbon booze on top of this is not a friend, roasted nuts, flaky biscuit and chocolate malts don't balance enough. Feel is light yet syrupy, thick, sickly sweet on the finish, barrel has limited texture. This was disappointing from a brewery that has been killing it

Pouring more viscous than I expected, it displays as dark chocolate syrup with burnt brown ribbons under a dark mocha head that fizzles out fairly quickly to a thin collar around a tar black surface roiling in the center.
Taste is quite mature, so much so the adjuncts are very subtle and I'm primarily getting more stout, barrel and age, which is quite the pleasant surprise. Up front and featured throughout the majority of the profile is a mild amount of dark fruit with char and chocolate malt, accented by a hint of pistachio before exhaling vanilla. The aroma accentuates that pistachio and even emulates spumoni, to the point I'm not sure if I'm just associating it or if there's actually a hint of maraschino cherry. As it warms, wild honey emerges, ever so delicately, with a touch of brownie crust adding to the exhale.
Feel is fairly thick and full, with a lightly cutting carbonation that itself thickens and rounds up before coming to a semi-sticky finish with a stern heat.
