Bourbon Barrel-Aged Vietnamese Coffee-Inspired Imperial Stout with Coconut and Cinnamon
Our team of innovators has created a liquid so remarkable that it can really only be described by quantum mechanics: Quantum Matter stems from a series of probabilities and interactions at the microscopic level between our Vietnamese coffee-inspired #CondensedMatter stout base, an elite selection of bourbon barrels, and two choice finishing ingredients. The molecular diffusion from barrel to beer layers compounds of vanillin, caramel, and spirit into the stout while a finishing spin through fresh flaked coconut and Vietnamese cinnamon sends waves of silky soft sweetness and just a hint of spice across the palate.

500ml capped bottle into a Side Project snifter.
Pours thick and black. No lace or head. Thinner legs than expected. Nose is cinnamon, espresso, toasted coconut, and cocoa powder. Rich chocolate and aromatic oak barrel. Sweet syrup. Beer opens honey and syrup. Super sweet up front. Hints of chocolate, fudge, and espresso beans in the middle. Liquefied toffee and brown sugar. Sweet cream and booze in the finish. Body is full with low carbonation. Slick and viscous on the palate and goes down hot with a long, lingering, sticky aftertaste.
Too sweet.

Returning to Bottle Logic for my following review, I found that the last two I tried were phenomenal. I hope this trend continues. I am serving the beer at 50 degrees in a tulip glass. The pour created a half-fingered, dark tan head with poor retention. The quick dissipation left no lacing on the glass. The color is inky black with dark rusty brown hues. It is semi-transparent and charting at SRM 36. Overall, it is a below-average showing for a high-ABV stout.
Nosing the glass, I detect toffee, dark-roasted coffee, a hint of char, Maillard, coconut, whiskey, dark chocolate, vanilla, dark-roasted malts, wood resin, treacle, caramel, brown sugar, earthiness, and a malty sweetness.
Sipping the glass, I taste dark chocolate, vanilla, treacle, char, coconut, toffee, medium coffee, molasses, caramel, leather, dates, whiskey, wood resin, earthiness, cinnamon, malty sweetness, and tobacco.
The mouthfeel is chewy and coating, finishing silky soft and creamy. The body is heavy and low in carbonation.
I loved the flavors in the beer, an exceptional adjunct addition with the complexity of barrel aging; however, the beer is cloyingly sweet. I don't mind a good dessert beer, but this one is too sweet for me. The beer reminds me of a mash-up of mounds with coconut, soaked in bourbon. The beer was tasty, but it fell short of my expectations. Lastly, the cinnamon was difficult to detect on the nose.

Brownish dark black body with a fat finger of brown foam. Molasses drenched toasty oak and coconut with vanilla before coffee, bourbon, and hints of raisin in both smell and taste, though nose not as defined. So smooth and warm with a heavy and thick body but not taxing with the barrel and coffee character. Nice work here

S - Aroma is black coffee, coconut, cinnamon and bourbon.
T - The taste is black coffee, vanilla, milk chocolate, coconut, cinnamon, oak and some bourbon heat on the finish.
M - Full body with medium carbonation. Creamy mouthfeel with a slick dry finish.
O - Top notch.

poured from a 500mL bottle into a TG DBA tumbler. pours black with dark brown edges. sweet coconut, light cinnamon and coffe, chocolate, vanilla and bourbon all on the nose. taste pretty much follows but i’m surprised at how much better i like the taste than the smell. it’s sweet but not crazy sweet with the chocolate base stout and the coconut addition taking the lead. there’s some barrel sting, oak, cinnamon and nutty flavors as well. thick, full mouthfeel. i don’t know much about vietnamese coffee but i thought this was a killer BA imperial stout. the adjuncts weren’t too heavy and the base is thick and chocolatey. good stuff.

Sweet and prominent coconut, milk chocolate, hint of coffee roast with a dash of cinnamon, and a hint of vanilla bourbon barrel nose on this one! Taste follows with a milk chocolate, creamy coconut, and cinnamon coffee bitter finish. This is really well-balanced and well done. The only place it is lacking is in the mouthfeel department. I mean, it still has decent depth, but you can't help but think about Hypermash Hydra with the same/similar additions used here. It falls short of HH's world-class viscosity, but is still well executed. This is good stuff!
