Apotheosis is the ultimate evolution of our Imperial Vanilla Stout, featuring bourbon-focused malt choices, premium barrel aging, and an unprecedented amount of vanilla beans per cask.
Ten years after orchestrating the specialty bourbon casks for our first batch of Fundamental Observation, Trevor Tyler, VP of Beverage Operations for Eureka! restaurants, returned with a set of Eagle Rare casks to create something extraordinary for our tenth FO vintage.
For the first time in its ten-year history, we significantly altered Fundamental Observation’s malt build to mirror the flavor profile of this remarkable bourbon.
By incorporating Chocolate Rye malt, we've added a layer of bitter dark chocolate with hints of bread and toasted almonds. The addition of Special B malts brings delicate notes of caramel and dried fruit, creating a nuanced and intricate malt backbone.

Poured at fridge temp. Pours an insanely thick black with a thin layer of brown head. The viscosity is crazy on this one. The nose is bursting with vanilla. Might be the most intense vanilla on a stout that I have ever smelled. Also getting notes of chocolate, bourbon, brown sugar, and a bit of maple.
The taste is fantastic. Again, loads of vanilla upfront. More of the imperial stout base comes through here. Some dark roasted malts, light coffee, chocolate, burnt toffee, bourbon, brown sugar, molasses, and prunes. Stunning stout.
The mouthfeel is super thick and creamy. The aftertaste is dominated by vanilla and bourbon. Glad I got to try this one.
