This past summer, as we celebrated the tenth vintage of Fundamental Observation, we offered a draft-exclusive sneak peek of FO: Huckleberry Pie — and it quickly garnered a spot among the top 3% of our highest-rated beers. It was clear this one deserved its moment, so we’re wrapping up the year with its first-ever bottled release!

A slice of sweet nostalgia, this variant builds on the bourbon-barrel-aged, Madagascar vanilla-soaked foundation of Fundamental Observation, layering in vanilla granola and brown sugar to recreate the essence of a classic pie crust. Finished with juicy huckleberries and a delicate hint of cinnamon, it’s an homage to homemade comfort that’s as inviting as it is indulgent.

If you're into sweeter stouts and berry dessert indulgences, this one is for you :)

Pours out softly due to its viscosity (measures 7 out of 10 on the bottle's Viscometer), barely any head, no lacing. The head that does form during the initial pour is fairly small, and a beautiful chocolate brown. Color of the brew itself is almost pitch black with a rich brown penumbra right at the very edge on the surface of my Bottle Logic DSN TEN glass; tried to shine my cell phone light through it, and no light gets through.

Aroma is off the charts; you do not need to lean in close to catch it, it wafts perfectly right up to your nose and beckons you to come closer. The huckleberry note registers more as a raspberry jam from a sweet, buttery pastry followed by chocolate and dark cherry notes, which mellows out to its original huckleberry and vanilla essence. Mouthfeel is almost like chocolate melting in your mouth; carbonation is mellow and balances out the brew

Flavor is reminiscent of their Paisley Cave Complex, but I'd say the huckleberry adds more red berry notes like raspberry and cherry syrup. As it warms up a bit, the red berry notes, become more prominent, and for me, this is when the huckleberry note shine through the most. The reason why I've rated the taste and overall as a 4.75 instead of a 5 is because I'm a vanilla fiend and was hoping for a liiiiiiittle more vanilla; chocolate and bourbon oak notes are a bit more prominent IMO-- the vanilla is there though :P Some toasted nuttiness, and just the slightest bit of sensual leather, too. Just the barest, faintest tinge of liquorice-- you have to want to taste it for that subtle note to shine through, but it's there!

Would make an excellent gift for a stout lover with a sweet tooth

Opaque black pour with a thick finger of tan colored foam. Smell is bursting forth with sweet/tart title berries with vanilla right behind before the barrel, cinnamon, and caramel follow up in a wave together. Taste has some dark chocolate in the periphery, the barrels are not as complex as the nose but the berries still star impressively. So smooth, warm and then rapidly cooling, impressive! This is exactly what it should be, well done! Good stout even for summer

Poured from a 500mL bottle into a Perennial SdC tumbler. Pours a thick and shiny black with a thin foam cap that’s quick to fade away. Chocolate and vanilla up front when cold. As it warms more whiskey and berries. Lots of berries on the finish but still nice notes of vanilla and chocolate. Medium-full mouthfeel. Fruit in stouts is not my jam but this was decent.
