English Pale malts and flaked barley meld with blackstrap molasses for a hearty and complex malt flavor. For hops we used Cluster the first hop cultivated in the US. The beer finishes with the modern Simcoe and centennial. The bourbon aging then adds its own unique character to make this a perfect dessert beer. The latter gives a deep piney flavor aroma, a nod to a state treasure-the Pine Barrens.

Hazy, light copper body with a small, off-white collar. Aromas of fruity malt, oak, vanilla, dank wood. Tannic, lots of wood notes, a touch of spice. Medium alcohol presence. Light to medium body.

Bottle served in a snifter. Pours a dark amber color with a short whit head that leaves some lacing. Nose picks up spice, possibly coriander, and taste is much the same. Very little barrel characteristics come through for me.
