Pours a clear golden color with visible carbonation. A moderate foam head retains well.
The nose opens musty and slightly funky, with an oaky and earthy smell. This gives way to fruity and floral aromas, including citrusy notes of grapefruit, lemon, and lime. The aromatics of the adjuncts are lively too, including notes of chamomile, ginger, and peppercorn.
Aligning with the aroma, the chamomile, ginger and peppercorn flavors are heavily featured. The palate is very dry, accessibly tart and rustic, yet also fruity. A dry cracker malt backbone supports the rustic, oaky and tart palate flavored by gently sour notes of lemon, lime, grapefruit, orange, even notes of kiwi and melon. The chamomile adds a subtle sweetness, while the ginger and peppercorn spice it up nicely. The finish is tart and wonderfully bone dry.
Medium bodied with a tangy yet somewhat smooth mouthfeel. The carbonation is moderate.
I love how this showcased the fruity qualities of Brettanomyces and how well it paired with the adjunct ingredients. I cannot write enough good things about this beer.
