Big bodied Imperial Stout with multiple specialty grains, a whole lotta lactose, chocolate cakes (yes, plural) and toasted coconut to add an even more pastry like profile and provide a bold and silky creaminess to the body of this beer. We then blended multiple barrels of Russel Reserve and Buffalo Trace Barrel-Aged Imperial Stout to the equation. To top it all off and truly make this stout CAKE like, we conditioned this blended beer on an insane amount of Indonesian vanilla beans, cocoa nibs, liquid cocoa and multiple drums of marshmallow fluff.

TrimTab 5th Anniversary Chocolate Birthday Cake Stout. In my opinion, the best brewery out of Alabama. I hope this doesn't let down. Purchased at Loosa Brews, Tuscaloosa, AL.
Poured from the bottle there's a nice viscosity, with a medium tan-colored head that bubbles up and rises to about a finger above the beer as it's poured to the brim of the glass. The head dissipates quickly, leaving a brown ring around the beer and small islands of carb floating atop.
Right off the bat, the nose is pretty spot on. Hints of coffee and roasty malt, but the clear predominance here is lightly bitter chocolate. Similar to a baker's chocolate or a ganache, but on that same wavelength as a chocolate cake. Seems to only sweeten as it warms, reminding me of a rich, sweet hot chocolate drink. As it warms, the barrel really starts to open up, with the vanilla helping to open up that oak and bourbon influence.
The flavors start a tad malty and roasty, but it opens up a bit more on the palate. What began more bitter definitely sweetens on the tongue, evoking much of the same as what I found on the nose. Raw, lightly bitter cacao nibs and medium roast coffee. The barrel has a pretty subtle yet noticeable influence as well, showcasing mild oak and a bit of bourbon booziness. At its current temp I almost get more tiramisu than chocolate cake.
Mouthfeel is nice, medium viscosity with a good mouth-coating left behind in its wake. The ABV is by no means staggering at 11%, however there is a pleasant warmth left behind from the barrel that aids in the overall experience. Carbonation is low and soft, essentially a non-factor but not really necessary for this particular beer.
Overall, the only place I was really disappointed with was not getting much influence from the vanilla bean & marshmallow inclusion. The beer is very good, but with a more prominent flavor from those two adjuncts, this beer could have been really special.
