Neomexicanus Wit is a collaboration between KC Bier Co and Rizoma Liquid Creations that celebrates German and Hispanic brewing tradition. Brewed with a Belgian Wit-Style yeast and dry-hopped with indigenous Neomexicanus hops, this bier is refreshing and fragrant with aromas of banana and tropical fruit and a dry, crisp finish.

Pours a pale light yellow-orange with a foggy transparency. Head is two and a half fingers of fluffy white foam that retains well. Aroma is spicy, zesty, grassy, and lightly floral hops with a sliver of clove, banana, and fruity yeast behind. Very subtle pop of hop flavor at the front and then semi-dry wit bier just beyond. Flavor profile is a little more intermixed, delivering fruity and spicy hops before biscuity, bready malts. Subtle hop sweetness meets malt dryness. Finish hangs onto dry malt notes with a splash of zesty and grassy hops. Mouth feel is medium in thickness. Texture is soft at first and gets fuzzy and frothy towards the end. Overall, it feels a little chaotic at times, keeping it from being a smooth sipper.

Served in a 15.5oz Spiegelau tulip from a 12oz bottle.
