Poured from a 18oz can into a tulip at 45 degrees,
Look: Pours a pale lemon color that is fairly hazy. Crisp carbonation.
Smell: Initial hop aroma of grapefruit and honey. Some apple and apricot underneath. Some bubblegum aroma too.
Taste: Bitter/tart grapefruit flavor initially comes forward that fades quickly into a mild funk that is tastes like an old dish rag. An interesting Brett strain here. Very soapy and earthy like an old sponge or dish rag with some old sour lemon/lime soap in it. There's also a subtle DoubleBubble bubblegum or plastic flavor. It's tamed and not really offputting. That is all then wiped clean by such a strong bitterness that is pronounced and lingers on the tongue.
As the beer sits the DoubleBubble becomes more pronounced.
Feel: Light bodied and crisp and well carbonated. Very palate cleansing. Leaves no flavor, but rather a bitterness on the tongue.
Overall: This is an interesting beer. It is quite light for an IPA. The Brett produces a mix between DoubleBubble bubblegm and a dirty lemon/lime dishrag. Bitterness is well-pronounced. Right where it should be for a Brut (unlike other Bruts). For you Brett fans, the question is do you like your Brett dry or sweet? If dry, than this is your beer.
