Another “coferment” experiment, this time with Illinois grown grapes. Similar to Other People, it could use some time in a barrel to develop more complexity.
Very pale gold, bright clarity and ample white foam, spotty lace.
Aroma has a little sulfur present, a little like white grape juice and communion wine.
Tart and floral white grape juice, clover honey, little bit yeasty. Crisp and light bodied, kind of like a sparkling cider. A little short on complexity and body, could use barrel time and more wild funk.
