Someday is a mixed culture solera saison. From that foeder on the tip top of bungalow. It’s got a couple bretts in it. Some lacto. Some age. It’s mature. Or, at least part of it is. Way subtle tart. Way subtle earth. Way subtle all around.

Formerly Solarium, name is now Someday. “Foeder-aged, mixed culture solera saison.”
Slightly hazy golden orange, served by the glass at Middle Brow in a plastic cup on the patio. Foamy with a lasting head and spotty lace.
Hugely dominant THP in the aroma and taste. Mousy, popcorn kernels, cheerios. This off flavor just takes over any subtlety of the wood-aging and it becomes one dimensional. Funky more than tart, mellow acidity. Odd lingering aftertaste. Light bodied with light carb. Overall this is my least favorite wild beer from Middle Brow. Not sure why they promote it as “the best beer they make”, as that’s far from reality.
