Collaboration with Baghaven Brewing and Blending.
Sour wild ale with yeasts and bacteria from the Baghaven area in Copenhagen and our house culture. Aged in old red wine barrels for a year. Foraged Chamomile, Roses and Elderflower were added near the end to give the beer floral notes with hints of cinnamon buns!

Copenhagen 19/2 2023. 37,5 cl bottle from Mikkeller web-shop. Off-white label with some aquaria splotches resembling roses in ted anf pink.
Pours opaque hazy, golden yellow with a small and bubbly head. Settles as thin, patchy remnants of foam floating about. No lacing.
Aroma is fairly intense with a strong sour scent of unripe berries and citrus fruit mingling with a herbal, tea-like odor. Unripe gooseberries, tart currants and a bit of citrus. Charmoile tea.
Medium strong carbonation. Thin, oily, soft, lightly tingling texture.
Flavor is intense with a light sweetness followed by a strong tart sourness. Aftertaste is sour and bit sharp. Tang of Chamomile. Lingers for a bit. Finish is rather dry.
Well made but a bit too herbal for my taste buds.
