In 2017, our first batch of Adaira was introduced to barrels which previously held bourbon & maple syrup. Allowed to spontaneously ferment on wild yeast carried by the syrup, a new annual release with the discovered combination of mixed cultures evolved.
Adaira 2018 was barreled for twelve months, producing mildly tart, complex, and funky notes of black cherry, plum + oak tannins. Soft, delicate hints of Cabernet Sauvignon and balsamic with a dry pucker.

Simply the best beer I tasted at the Extreme Beer Fest in Boston.
Came across like a stout that had been given over to wild yeast. Dark red brown with a sour funky nose and a cherry-chocolate-citrus flavor profile. I'd buy it in an instant if I could find it again.

Dark brown color. Funky aroma. Slightly tart but the right amount for me. Complex funk, accentuating a chocolate malt backbone. Very interesting. Like you mixed a saison, some funky Belgian the Thirst Monk’s basement bar would serve, and a chocolate stout. This beer alone made me glad I went up to the Extreme Beer Fest in Boston.

Burgundy in body with off-white head. Aroma of bourbon barrels, rye, lemon skin, grass, sour notes, maple syrup, and medicinal notes. Tastes wild, bourbon, rye, maple, lemon, sour grapes, light dirt, cocoa, Black cherry. Medium bodied with active carbonation.
