Alsatian Style Pilsner

Viva la Pils is an exploration of oft underappreciated, underutilized French brewing ingredients. Viva la Pils was brewed with a grist comprised of 100% French heirloom malts, which provide notes of sweet bread, breakfast cereal and wildflower honey. Strisselspalt hops, from Alsace, offer a delicate bouquet of fresh-cut grass, sencha and stone fruit. Viva la Pils is wonderfully nuanced and balanced but as easy drinking as its German counterparts.

A: The beer is clear dark golden yellow in color and has a light amount of visible carbonation. It poured with a quarter finger high white head that left a large, thin patch of bubbles on the surface, a narrow collar around the edge and some lacing down the sides of the glass.
S: Light to moderate aromas of biscuit and cracker malts are present in the nose along with notes of honey.
T: The taste has flavors of bready malts with notes of honey and finishes with hints of grassy and spicy hops. There is a light amount of bitterness.
M: It feels medium-bodied, clean and very dry on the palate with a moderate amount of carbonation.
O: The smell and taste of this pilsner have a lot of interesting complexities. I particularly found the honey-like aromas and flavors to be interesting.
