a stunning little bottle of beer here, under their origins brewing label, smuggled back from our trip to scotland last summer, one of a kind stuff, all wheat based, loose a gose, but done with seaweed and spend hops in the mash and well beyond the normal fermentation parameters of the style, this has a mixed fermentation to even wild profile to me, salt and coriander as well, truly astounding liquid. light haze at first, a little more as we pour it down, decent loose white head rises and falls, enough carbonation, looks delicate but not overall as light as i thought it might appear at this very minimal abv, which i think is awesome. the nose opens up a lot, kind of fills the room, light tart funk, green olive brine character and almost herbal profile, jasmine or something floral and sweet and delicate and springy but also cool, wet rock and concrete minerality, definitely salty and oceanic, earthy wheat is pretty robust here too, the salt minerality is amazing, and the tartness is pleasant without pushing too far, the coriander seems fresh, and the funkiness is killer, very scottish somehow, yeast driven, layered, at once exceedingly complex but also fully cohesive. the flavor follows, salty the whole way, modestly tart the whole way, notes of lemon and heavy minerality, fresh and also mature to me, light animal funk, the seaweed part is mostly later, light bitterness, wet in a unique way, really compatible with the coriander, which is a considerable flavor element, dry as a bone but with plenty of hearty wheat character throughout, again green olive and capers, white wine, actual ocean water, ice cold, and little pops of cut flowers, its just incredible. nice and bubbly, a little green glass weirdness on it too that is good with the ferment, wheaty body, infinitely drinkable but also so special i do my best to savor every bit of my half of this bottle, each drop precious and original and fleeting. a beer im almost immediately emotional about, very very profound...
