Double Mashed. Overnight boil. Tons of oats. Lush imperial stout with notes of dark cocoa, chicory, and leather.

Sampling a cellar temp 500 ml bottle poured into my snifter. I picked up this bottle fro the brewery in November, and its been in my cellar since then. Label only says 2021 as a date.
The beer pours a rich dark black coffee color with a frothy, yet also dense tan head of about1.5 cm. This head fades to a sturdy edge layer that remains through the sampling.
Aroma is roasted malts and dark chocolate with a bit of coffee grounds. Malt forward aroma, not sweet at all. No hop profile nor hints of the ABV. I get a little bit of anice and maybe some tobacco as the beer warms a bit. The tobacco could also be a charred note, its very faint.
First sip reveals a medium body with very smooth and silky texture and fine tingly carbonation. The beer drinks very easy for a higher ABV.
Flavor is similar to the nose. I get roasted malts, molasses, charred wood or burnt notes, some dark cacao hits too. The anice is there and maybe a little dark fruit. No hops here either. No warming booze or fusol notes to speak of.
Pretty tasty old school imperial stout. Enjoyable purchase from this New Hampshire brewery.

From a 500ml bottle, labeled simply 2021. Served in a cervoise.
Pours a somewhat viscous appearing brown-black, utterly opaque in the glass, with a scant finger of rich chocolatey foam. The head holds up for a minute or so, settling back to a thin, wispy margin and a barely rousable thin, slippery sheet of lacing.
Nose is rich, roasty, massively aromatic. Aroma of toasted granola, brown sugar, and boozy custard.
Taste is rich and sweet, roasty and thick with plummy booze. Tasting granola, brown sugar, molasses, sweet plum wine and charred chicory. There is something of a NyQuil character to the beer however.
Feel is smoooooth, dense and unctuous, thick bodied and gently carbonated. It is heavy and fairly sweet but doesn't quite devolve into syrupiness. There is a smoldering boozy warmth in the gullet.
Overall, pretty good stuff but maybe a little sweeter than I might have preferred.
