Collaboration with Pink Boots Society for International Womens Day. This 8% tripel is brewed with apricot, grains of paradise and Pink Boots Society 2019 hop blend. Subtle spice on the finish to compliment the sweetness of the fruit.

On tap at George Keeley, NYC.
Pours a golden color with an orange hue. A lovely frothy head displays good retention.
The aroma of apricots stands out the most. However, the aroma also reveals notes of melon, mint, grass and a touch of floral hops. The malt aroma is honey and cracker like.
The taste predictably showcases the fruity sweetness of apricots. Yet, the complexity of flavors and dryness of the palate balance things out nicely. There is a dry and cracker like malt backbone with notes of honey. This brew is well hopped, more for flavor than bitterness, and reveals citrusy, lemony and berry like notes. The fruity esters yield notes of citrus peel and melon. Perhaps most significantly, the developing taste of peppery phenols add a significant spice to the drink. Notes of pepper, coriander, grass, tobacco and a light alcohol spice round things off.
Medium bodied with a fizzy carbonation that produces a nice crispness. A dry spicy finish with a light lingering bitterness keeps it drinkable.
Overall, an enjoyable beer that is a good representation of the Tripel style.
