For this Christmas gift we double-mashed a combination of Belgian & German malts for maximum body & flavor. We then added Belgian Candi syrup, cinnamon, allspice, nutmeg & a final touch of over 120 pounds of plum puree during fermentation to create this perfectly complex & boozy Belgian Strong that will have you caroling in no time!

Mostly clear, dark amber appearance, mild cloudiness in the body; moderate carbonation, slow-rising; no head per se, a thin circle of foam inside the glass. Fermented raspberries on the nose; heady fruity esters galore. Big flavors of plum, candi sugar, and swimming in pool of booze; low to moderate sense of phenol bitterness; apple cider. Heavy, near syrupy mouthfeel; faint note of alcohol dryness.
Overall, this beer comes across true to its Belgian strong ale intent, definitely fruity and boozy. The candi sugar presence is quite evident. The spices listed on the brewery's web site are pretty well hidden, but I'm sure contribute to what I perceive as candi sugar and phenol notes. On a late note, after a few more refill pours into the glass, a more respectable head presence appears, thin, still patchy, but covering most of the top of the beer, plus there are tiny flecks of foam left on the side of the glass after every sip. Bottom line: a bold beer for the season (especially on the taste-side of things.
