some of the greatest complexity i have known in this ancient unhopped hebal ale style, a fine example of a gruit here, rustic and interesting, even from a yeast standpoint, at least as it presents itself, impressively high quality. this place was really solid considering the relative lack of hype from the locals, so much good beer in this town, but this was some of the best around in my experience. clearish light copper colored brew with a short lived little head on it. aroma is strong of rosemary, very late fall to me, food-like even, notes of pine and red apple, some light saison type funk too, wine esters, hearty grain base maybe some rye in the mix, heaps of herbaceousness, green tea, root vegetables even, its awesome. the flavor is a little lighter than the nose but with equal depth and character, rosemary above all other ingredients, the rose hips add a lightly tart perfume fragrance thing, and there is even a citrus-like bite at the end, some botanical bitterness where hops generally are. this is made from a place of high understanding and confident competence, and it really comes through in the beer. well done, i wish there were more of these out there in the world...
