500 ml bottle into tulip glass, brewed in 4/2016. Pours slightly hazy medium golden yellow color with a 2 finger fairly dense and fluffy off white head with amazing retention, that reduces to a large cap that lasts the whole glass. Thick foamy lacing clings on the glass, with a large amount of streaming carbonation retaining the cap. Amazing appearance. Aromas of big lightly tart lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, apricot, passion fruit, papaya, mango, melon, guava, berries, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, white bread, light leathery/musty funk, and yeast earthiness. Damn nice aromas with great balance and complexity of fruity/funky/spicy yeast, citrus/tropical hops, wine barrels, and moderate pale/wheat malt notes; with great strength. Taste of big lightly tart lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, apricot, passion fruit, papaya, mango, melon, guava, berries, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, white bread, light leathery/musty funk, and yeast earthiness. Light-moderate peppery yeast spiciness; light herbal, floral, grassy bitterness; and Brett/wine tang/tartness on the finish. Lingering notes of tart lemon, lime, orange, grapefruit, citrus peel/zest, peach, pear, pineapple, apricot, passion fruit, papaya, mango, melon, guava, berries, red/green apple, white grape/wine, peppercorn, oak, hay, straw, grass, wheat, cracker, white bread, light leathery/musty funk, and yeast earthiness on the finish for a good bit. Fantastic complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/tropical hops, wine barrels, and moderate pale/wheat malt flavors; with an awesome malt/spiciness and wine tang/tartness balance; with no puckering/astringent flavors after the finish. Moderately crisp finishing. Moderate increasing dryness from spiciness, lingering wine tang/tartness, and carbonation. High carbonation and medium body; with a very smooth, moderately creamy/bready, fairly sticky, and lightly acidic/tangy/tannic mouthfeel that is great. Minimal warming alcohol for 7.5%. Overall this is a fantastic dry hopped Brett saison! All around fantastic complexity, robustness, and balance of fruity/funky/spicy yeast, citrus/tropical hops, wine barrels, and moderate pale/wheat malt flavors; very smooth, crisp, and easy to drink with the high carbonated/spicy/drying finish. Amazingly well rounded Brett/saison yeast complexity; with perfectly balanced juicy Citra hops, wine barrel presence/integration, and pale/wheat malt backbone. Minimal residual sweetness with crisp dryness. A highly enjoyable offering, and amazing style example.
