22oz bottle poured into a chalice. May 4th bottling date.
A: Lightly hazy and tawny colored. Fine-bubbled off-white head settles to a thin cap. Spotty lacing.
S: Freshly baked bread. Yeasty/spicy. Hint of pepper and clove. Pear. Pulpy orange. Hints of mashed banana come out in time. Floral.
T: Big bready malt foundation. Very yeasty with a vague spiciness. Pepper and clove. Oily hops set in on the mid-palate and bring some spicy bitterness. Mashed banana and pulpy orange and tropical fruits. Brush of alcohol. Trailing alcohol and spicy hops on the finish.
M: Medium-thick body. Creamy and chewy texture. Very mild hop astringency can be felt gripping at the teeth. Mellow, fine-bubbled carbonation pricks about the tongue, but the strong effervescence expected of the style is definitely lacking.
O: A good stab at a style that can be daunting for brewers. This one has some real potential. The essence of a very good Belgian Tripel is here. The main problem is a lack of carbonation, and that shouldn't be too hard to fix. There's also a little more hop character present here than in your standard tripel, but that may have been the brewer's intent anyway. Carbonating this to a nice, lively effervescence would make all the difference.

This was a hazy, dark golden color. It poured without much of a head.
Mild apple and pear plus lots of sugar and a bit too much perfumed booze. Not bad but not near as good as their saison.
