a wet hop ipa done with honey from what i gather, and from what the name suggests, its incredible stuff, hands down the best beer i have had from perry street, although its done in collaboration with draughtworks. the hops are simcoe and more notably sabro, no knock on simcoe, they just seen to be in every wet hop beer this year. i love the honey, or the honey vibe created by the hops, this really seems floral, polleny, and almost waxy sweet, raw and from nature, distinctive immediately in the nose and then all the way through it. the sabro is becoming a favorite hop of mine, and here lays passion fruit, coconut flesh, and sweet orange all the way through this, which seems to love the honey element, it covers my palate instantly, but is neither sticky or heavy to drink, its just so flavorful that there is almost no depreciation of its intensity on the swallow. one of the keys here is that there is no bitter bite at all, no overdone harshness, no greenness, obviously wet hops, but turned way up here. the simcoe adds additional citrus to the fold, and the hops seem to permeate to the center of my tongue. its insanely flavorful beer, fluffy feeling on the grain side but light in flavor, there has to be real honey in this. fresh flowers, tropical juices, and blooming freshness, the flavor is almost impossible to describe accurately, its so unique. this beer is a triumph, and my favorite wet hop beer of the year this year, unforgettable!
