its really saying something because all their beer is fire, but this was hands down my favorite from my recent visit, the first wild fermented beer i am aware of them having done, a lemony hoppy saison thats quite rustic, but done with a house wild culture that presents itself as more bretty than bacterial, subtle but distinct, and this is super interesting and well refined overall, downright impressive, frankly this blew my mind. its pale yellow from the tap with two inches of airy white head, looks dead sexy from the teku they serve it in at the brewery, lots of bubbles, softly hazy. it smells like fresh zested lemon, an emergent bretty funk with a real farmy side to it, and fresh white wheat, simple but infinitely nuanced at the same time, for me meyer lemon and tangerine, hay and straw, and flowers and tea. its delicate but also kind of musky and deep. its also very well hopped, a mix of old world and new world to me, citra for sure brings out the lemon, maybe something noble too, short of spicy but it finishes dry and bitter. i love the proportions here, the way the brett adds so much but lets the hops and zest do a lot of the walking, elderflower and jasmine notes, even a peach hit, some grassiness late, and whooshing carbonation. this really is fantastic, only minimally tart, drinkable as they come, one of the best and most unexpected saisons of my summer so far this year. they should package this if they dont, its as good as anyone is doing with this type of thing, and i mean anyone. they should be awfully proud of it! unforgettably good, the ferment rules, its just magic.
