A golden sour, inoculated with a mixed culture of brewer's yeast and native wild microflora from the brewery grounds in Fulton. Aged for 11 months in French oak red wine barrels from Pollak Vineyards in Greenwood, VA, Peach Sliced is a blend of 5 barrels re-fermented on peaches.

Viewed side by side with the aged base, Caterpillar, Peach Sliced is obviously the opaque beer that presents much like diluted peach juice. The strong tartness and acidity is still here, but now tempered with a beautiful aroma and flavor of fresh peaches and more subtle notes of cocktail syrup. This provides a welcome balance and complexity that primarily emerges on the mid-palate after an initial surge of tart wildness.
After trying two flights between myself and my wife, this came away as my clear favorite of the day at Triple Crossing. Exceptional.
