We topped up our house Foeder with wort from our beloved Clever Girl IPA for a lengthy conditioning in oak with our house culture. After several months in the Foeder, a portion was pulled off into stainless and dry-hopped with Citra and Mosaic. Following several more weeks of biotransformation as the Brett and bacteria from our culture continued to mingle and interact with the hops, the beer was bottled and conditioned with wildflower honey to provide softer carbonation and acidity.

Something about this magical interaction of hops, yeast and bacteria, yields a beer dripping with tropical juice character. We perceive notes of Welch's white grape peach, freshly chopped pineapple, and slightly dank grape must with a drying, tangy acidity.

I love Brett IPAs, and while this wasn’t exactly the Brett strain I was hoping for (prefer Brett Drei), it was still super refreshing, with a good amount of funk, and just amount of hop presence to provide some dryness. Slightly tart, with a great, silky mouthfeel. Wish I had several more bottles to drink!

Not my kind of beer. I love Clever Girl. Been drinking it ever sense the brewery opened but this in no way remotely resembles that beer. I am sure the aging of it is the reason.

Anyway, most folks have beer styles they do not like.
