The 2021 vintage of Oxeye, part of our series hoppy Grisettes, drops today. Open fermented in the coolship with our house Saison culture last July. It was then transferred to red wine barrels and conditioned within the oak for 6 months. From there it was blended and transferred to a stainless-steel tank where it was dry hopped with Saphir. We’ve become quite enamored with the character expressive noble hops can bring to our mixed culture offerings. Pours a beautiful deep gold with a rocky, white head and spritzy carbonation. We taste notes of lemon balm, honeysuckle, and fresh white grape all balanced by a hint of oak and very delicate acidity. This might be the most drinkable Saison/Grisette to date and it’s here just in time.
