Sensible, hoppy, balanced, drinkable and refreshing- this largely defines the rule book for making reasonable IPA. But Honolulu isn’t interested in any of that as they head into a stronger, bitter, sipper of an IPA with power and flavor.
Mildly hazy and pouring a deep golden hue, Don’t Read The Rules builds a creamy white froth and an aromatic display of citrus, tropical fruit, stone fruit, alcohol spice and piney resins. Sweet with honey and caramel, the malt backbone shows a lightly toasted, slightly savory balance.
Growing hops deliver a bold display of citrusy tangerine, red grapefruit and a suggestion of lime while more tropical flavors of pineapple and mango show a more exotic fruit flare. As hints of apricot and peach flow into a bitter finish of pine needle, fresh grass clippings, botanical spice and peppery alcohol dry the finish for a reasonable drinkability.
Full bodied yet trending dry, the alcohol and bitterness combine for a stick but dry resin quality that extends into a long aftertaste of citrus peel, pith and gin-like botanical warmth.
