Spontalis Novus is our unblended lambic style ale. After spending a night in the coolship the wort is then pumped directly into oak barrels where it is spontaneously fermented & then aged 1 year in the oak barrels.

Pours a hazy golden, more in the traditional sense. No head retention to be had. Apple cider vinegar, Lemon zest, and a touch of Parmigiano Reggiano on the nose. It's got more apple cider character than I would anticipate - with its acidity and flavor, this almost drinks like a Flanders Red or Oud Bruin. Lots of tannic character from the oak, more green apple. It's all a little too much for me, though I appreciate this effort.

A bit of harsh hairspray on thenose and in the taste but fades into a pear juice sweetness. Oak and some funk comes in later. As a start of a lambic program, nice beginning; could pass as something Belgian, IMHO, rather than American. Interested to see where they go with blending.
