this is a weird one, an adaptation on the already interesting ducato brew, this time aged on granite instead of wood barrels. the result is interesting, although the end product is no better than the original. there is a fine minerality to this, the granite obviously brings more of the salt and earthy dryness to the fore, but its kind of lacking on the carbonation, feels much much thicker than the original, and seems somehow too old, like it spent too long in here, its just a little lacking on the grain element in that way. i like the complexity, this is obviously advanced beer to begin with, given a new and creative wrinkle here, i wonder how these two operations got hooked up in the first place. a nice reserved sourness, lots of salt and minerals, and a slight floral element. it definitely needs more carbonation, thats the biggest weakness for me, but the acidity helps cut the extra body. a neat tweak on one of my favorite ducato brews, but its not an improvement in any way, shape, or form...

Wow. What a strange beer. Baciami Lipsia is a great Italian gose to start off with. OEC tends to turn the sour up to 11 when they tweak beers for the Zymatore project. I was very thankful that they didn't do that to this one. The level of sour is perfect! And the best part; they aged it not in barrels, but in a custom blue-grey granite fermentation vessel. The aftertaste - granite. How strange.
