Imperium is part of our Frigus project. Frigus barrels are selected and aged in our small barn. The barn is neither heated nor cooled and in the winter drops well below freezing exposing the beer to the natural fluctuations of our climate. - Imperium is a wheat wine that was brewed specifically for this project and initially aged 1 & 1/2 years in red wine barrels. This Double Barrel Singularis edition was then matured an additional 9 months after freezing in two Matthiasson Vineyards Chardonnay barrels from Napa, CA.

This one pours a dark reddish brown color, with a small head, and not much lacing.

This smells like funky and chocolatey red wine, old grapes, oak, booze, and raisin.

This is a sour wheatwine, and it might be the first time I’m having this super niche substyle. It presents as somewhat oud bruin-ish, with a ton of acidity, bordering on acetic, but with a pronounced maltiness – raisin, caramel, breadiness. There’s a lemon candy, maybe even Jolly Ranchers, kind of vibe, too.

This is medium bodied, with a very low level of carbonation.

This is quite weird, and doesn’t fully come together, but I’m happy to have tried it.

Smell: musty grapes big red wine presence oak funk tart

Taste: this is so much like a red wine I get that musty grape skin a noticeable sweet burning alchool presence tart funky grape juice a noticeable oaky woody presence.

Feel: medium body minimal carbonation super dry in the finish with that grape flavor lingering in the aftertaste.

Overall: this is like a red wine in every way. this is my second beer from oec and I'm super impressed. Should only be a matter of time before these guys get the national atttention they deserve!

This beer is insane. Dark, dark, dark musty sour ale. Strong as hell, 11%. The flavor is intense and the sour bites as much as any other OEC concoction. Taste is sour, sweet, malty. Red wine with dark fruits covered in wild yeast. Just so hard to describe. Definitely a must-try for any OEC fan, and a huge step up from the regular Imperium.
