L: Pours a straw color with very low if not minimal haze. A gentle pour results in a half finger white head that immediately falls to a slight ring around the circumference of the glass.

S: On the nose I am getting just a hint of peaches, lactic acid, some lemon character, and a touch of funk. The nose is dominated by the lactic acid and lemon, but is still slightly muted.

T: I get light notes of peach on the front end quickly flowing into and subsumed by lemon mid palate. The back end presents just a hint of funkiness and light notes of oak. The back end and finish have a nice gentle sourness. As a qualifier I should add, though, that the sourness increased a bit as the beer warmed and/or I started pouring in the sediment from the bottom of the bottle.

F: Medium-light body with medium carbonation. The mouthfeel has a nice softness to it with the backend and finish turning a bit vinous with a hint of dryness.

O: I like this beer, but not as much as the Classic and Rosé versions. For me the nose was a bit muted and the taste was just not as complex as the other two. This is also the least funky of the three so your mileage will vary depending on if you like the funk or not. I wanted more peach and saison but for me this one is dominated by the Hanssens lambic which is not necessarily a bad thing, but if I wanted a Hanssens lambic I could just go out and buy one. This one does shine in the mouthfeel category and nicely balances the saison and lambic mouthfeels.
