Evenstar is a special blend of our Belgian-style Quad soured in Cabernet Sauvignon and bourbon barrels. It pours a deep mahogany in color with a subtle off white head. The nose has intense notes of red wine, vanilla, & dark fruits. The bourbon barrels lend a touch of sweetness leading to a balanced oaky finish.

L-Pours a beer with an off white/tan fairly uniformed head. The body is deep mahogany in color, with a hue of purple/red. Cloudy in appearance with subtle carbonation throughout.
S-Straight up funk sourness up front with earthy barnyard. Sweet raison, plum, blueberry and cherry notes follow. Sugary date and molasses is found as well. Marzipan noted. Sour lime is there, too. Banana also found. Notes of woody cabernet is very present, with sweet bourbon wood barrel booze towards the end.
T- Vibrantly tart up front with funky barn musk. The woody cabernet and oaky sweet bourbon are prevalent as well. Fruity notes of sour cherry are there with grapefruit sour bitterness towards the end. I get notes of plum and dried fruit, like raison, apricot and date, but really just a hint towards the end.
F-Medium bodied, sugary, syrupy and sticky mouthfeel.
O- High quality, and expertly crafted but not necessarily for me. A bit heavy handed on the tartness for my liking, if I'm being quite honest, but still very much enjoyed. Not what I would expect for a quad, but the tartness does make for an interesting take on the style. I praise this beer for it's effort, and for me it truly succeeds in what I believe it is wanting to do. It tastes like a soured Belgian Quad. Not sure if I would have this one again, but respect the craft and genuine quality of this beer.

Pours a frothy foamy 1 finger tan head with moderate retention, spotty lacing, clear cranberry maroon color
Nose is huge, super fruity, banana and citrus yeast esters, dark fruits like fig date prune for malt-derived esters, some tangy acidity and funk, some perfumey alcohol, sweet toffee, molasses, a bit of caramelized brown sugar, bananas foster with rum raisin ice cream with plenty of red wine and vanilla
Taste starts a bit tangy with some acidity maybe a fair wild yeast character in there, lots of fruit again with bananas foster flambe like, some souring acidity and tartness, red wine barrel, juicy red wine, fair vanilla and a bit of buttery oak notes, plenty fruity between the wine and esters, more banana, fig, date, plum, a bit of bourbon as well, mild perfumey alcohol, sweet caramel, toffee, oude bruin like, flemmy tart finish
Mouth is fuller bod, a bit syrupy, plenty of tart acidity and funk, med carb, fair warming alcohol
Overall interesting, it has the sour acidity for sure, but also some of the quad still in there, almost like a sour and quad blended more than an oude bruin or flanders red kinda thing, plenty of red wine barrel, some bourbon, generally tasty

Look: It pours brown with some plum hues and clouding. It has an off white head with average head retention.
Smell: It has strong malty aromas and cherries. There is definitely a tart note in the aroma. There are also hints of raisins and plums.
Taste: It has strong malty flavors with tartness. It has some cherry notes and definitely has a wine like quality to it. There are hints of plums and raisins in the background.
Feel: It has a medium full body with a medium tart finish.
Overall: This is not really in the style guidelines for a quad, but with the addition of tartness to the quad flavors it does make for a good drinking beer.
