Local 7 Session Gose is a beer so pale it's nearly colourless. Later on, after the sediment is introduced, it looks beige and has the complexion of wet sand. It has such a faded, almost bleached tone that you'd think it was left in the sun for a month. A light effervescence is the only sign of life.
Only after it warms up considerably is there any evidence of coriander on the nose. Such an aromatic ingredient aught to be more apparent, or so I'd like it to be. There's also nothing in the bouquet to indicate the style's patented sourness either. Everything so far is very subdued.
There's enough protein in this grain bill to muddy-up the complexion but not to weigh down the mouthfeel. This drinks as light as it looks, with delicate apricot and orange zest flavours and only a light, fleeting trace of coriander. Many sips taste of stale grain resembling dry bread or plain crackers.
Too much salt is worse than too little, granted, but this really lacks in that saline/mineral presence that distinguishes the style. Same goes for the characteristic sourness; this recipe doesn't offer nearly enough of that salty/sour interplay that makes Gose so incredibly refreshing.
If you ask me, Local 7 Session Gose was brewed with too gentle a hand and isn't exactly true to style. Its somewhat tequila-like floral and citrus notes are pleasant but don't make up for the lack of spice, salt and sourness that define the style. Mind you, these judgements are reflective of personal preference.
