Uses our primary IPA malt formula and double dry-hopped with Mosaic and Simcoe hops. This IPA exudes west coast IPA character with fresh mango, citrus, resin and pine dominating the aroma and flavor.
Quorum IPA is our rotating series of IPA's where we experiment primarily with interesting hop varietals and combinations. Quorum IPA constantly be changing batch to batch, although some of these batches could find their way into our regular line up.

32oz growler into a snifter. Pellucid yellow gold with a big soapy white cap that lingers for a minute. Sheet-like lacing clings to the sides of the glass.
The nose is redolent of tangerine, mango, pineapple, passion fruit, white grape, gooseberry, and peach. Unadulterated hop vibrance with no malt distraction. Exceptional.
The flavor is dry, but exhibits a welcome hint of sweetness that wards off palate fatigue. No astringency or harsh notes are evident. There's a smooth lower medium level of bitterness with a subtle saltine cracker malt character. The hop profile is bright and bursting with fruits, such as mango, passion fruit, tangerine, orange flesh, and pineapple. The fruit lingers for ages in the clean and pleasantly dry finish. The beer is lower medium in body with upper medium carbonation and a sticky and dry mouthfeel.
I've been a big fan of many of Council's offerings since they opened, but I think this is the best they've done and definitely in the upper echelon of San Diego IPAs, one that should be mentioned in the same sentence as Alpine and other San Diego hop experts. My understanding of the Quorum series is that the hops will vary each time, so I don't know how often we'll see this one. Regardless, let the history books read that Quorum (Mosaic and Simcoe) was made, it quenched the thirsts of many, and it was very, very good.
