August 16th, 2016 - Council Brewing is gone now (writing this review in 2021, RIP) but they made some damn good sours, and this guava variety was one of the best of the bunch. Bright and glowing, it looks like a Spring day sun, and throws out a curious scent of Banana, fancy bottled water, and sourdough. There is also a slight fruitiness like POG juice, but it's subdued. The fruit and acidity really wake up in the flavor, leading with the fruit notes, a strong sour stage, and then a long and luscious and enjoyable POG aftertaste. Paired with a light body, this flavor profile absolutely sings, and shows off Council's chops when it comes to sours.

Poured from a bomber into a Dogfish Head tulip

L: Nearly clear pale golden pour with 1.5 fingers of foamy white head. Solid lacing.

S: Tart and acidic. Funk, lemon, and guava. The guava aroma is actually a bit unpleasant.

T.F: Just like it smells. Tart/sour and very acidic. Green fruit, funk, and I'm not sure how I feel about the guava. Strong lemon... lacking balance. Light and crisp. More sour lemon and guava at the finish.

O: Not one of the stronger offerings in the Beatitude series, and again... I'm not crazy about how the guava works with the beer. Still.. nice and sessionable if you're in the mood for something tart and acidic. Not the easiest drinking but it is what it says it is.

A 750ml bottle with no clear bottled on or best before date. Poured into a 3 Fonteinen stemmed glass.

Appearance: A lightly hazy straw champagne gold colour with a one finger white head that dissipated fairly quickly to nothing, while leaving only some sparse spotty lacing.

Aroma: Tart, guava, citric, lemon juice, dough and a nice funk throughout.

Taste: Sour, tart, guava, lemon juice, passion fruit, and a light funk.

Mouthfeel: Acidic, light bodied with moderate carbonation.

Overall: Easy to drink with good guava flavours. A little bit acidic for my palate, but still enjoyable.

Has a strange funky smell to it, a little overpowering and I usually like that funk. Tastes of funk, sour guava, spices, and light citrus. Crisp light body with medium-high carbonation. Overall it's a good sour saison but the smell was off.
