We aged this imperial pastry stout in Yellowstone bourbon barrels for 14 months before adding fresh cocoa nibs, toasted pecans, Nicaraguan coffee beans, and natural vanilla.

Pours a dark brown and clear, opaque in the glass; thick, dense, spongy head, khaki colored. Sweet cocoa and chocolate smell; subdued yet balanced bourbon undercurrent; chocolate donut. The taste builds on the aroma; richer, sweeter chocolate notes augmented with vanilla with a deeper whiskey note with the addition of a moderate coffee flavor adding depth and complexity; well-hidden alcohol presence. Heavy body yet very soft and velvety on the palate; subliminal residual sugar stickiness helps retain the taste impressions.
This is just a fine barrel-aged and coffee imperial stout. The bottle label adds 'pastry stout' to the description. That is something I approach with some trepidation as I imagine most to be sickly sweet and overbearing. Not this beer. This beer does an amazing job of blending all its components and elements into one finely balanced and complex imperial stout.

Look - black and thick with nice rimming
Smell and taste - chocolate coffee with pecan and vanilla, no real barrel pick-ups
Feel - medium full body with a medium light carb, slight creammy
Overall - not bad, so much coffee and no real barrel.
