Brett Berliner Weisse- Our take on a traditional Berliner Weisse is not kettle soured, it is fermented with a mix of Lactobacillus bacteria and our custom blend of Brettanomyces. No Saccharomyces (regular beer yeast) is used to make this beer. The beer is then aged in an Oak Foeder for around 4 months to allow the flavors to develop and mellow. The result is a more complex version of the style with a smooth sourness and notes of citrus, berries, orchard fruits, tropical fruits, and oak.

500 ml bottle into a goblet. This is the foeder aged version released Fall 2018. Had 10/11/18.
Pours a mostly clear bright yellow, with a one inch foamy head and some spotty lacing. Aromas of funk, brett, lemon, some white grapes, some yeast. Smells lightly tart and sour. The taste shows a fair amount of tartness and a light sourness. Flavors of lemon, some white grapes, funk, brett, light malt, some biscuit, a little oak and yeast. Smooth, a very good light body, well carbonated.
The foeder definitely gives this more depth than earlier versions. Really improves the mouthfeel, as well. Very good aromas and flavors, nice levels of tart and sour. Really solid effort from IO.

Had this on 2017-12-02 at the brewery.
A cut above! Not kettle soured. Fermented with lactobacillus in the tanks on the west side of the brewery. Enjoyed this during the tour.
