Served on tap in a snifter
Appearance- Beer is served a lightly hazed yellow-orange color with a one finger head of white foam. The head fades fast leaving a bit of lace on the sides of the glass.
Smell- The aroma of the brew is heavy of cracker malt and a whole lot of yeast. Along with these smells comes lots of corriander and a bit of clove. Along with that comes smells of apricot and a bit of apple.
Taste - The taste begins with a cracker malt flavor mixed with apricot and peach. At the same time there is a good hit of spice of coriander and clove as well as yeast. As the taste advances the sweetness increases a bit all while the a touch of grass comes to the tongue leaving one with nice clean triple taste to linger on the tongue.
Mouthfeel - The body of the brew is light and the carbonation is moderate. Overall great for the style and a easy sipper.
Overall-A nice easy drinking and flavorful sipper. Tasty and well done.

Finally opened 2years later.
Extraordinary delicious Belgian Triple. Soft gentle carb with a velvety smooth body. Excellent floral nose and woody Belgian Triple taste. Just a marvelous, delicious and and wonderful sipper. So far better than expectations. So wish I could have More.

Appearance: Medium golden yellow body, surmounted by a large, very dense and persistent white head. The lacing is, appropriately, classically Belgian. Profuse, very fine beaded carbonation races to the surface, this lofts a small amount of sediment.
Aroma: Coriander, floral, pine, and grapefruit hops, and light fruit dominate the aroma, along with restrained sweet alcohol, notable in light of the rather high ABV of 9.8%. The malt contributes a substantial home-made white bread aroma. There is also a mild white pepper note.
Taste: Opens with coriander, and a surge of herbal and pine hops, soon followed by a wave of sweet alcohol, which is pleasantly warming. The coriander is an amiable companion throughout the taste. Later in the taste, there is some bitter apple rind, and white pepper flavors, complimented by the sweetness of the alcohol and malt. Late in the taste, the hops and bitter apple rind rise to dominance. The mild bitterness and sweet undercurrent of alcohol and malt bring the taste to a gracious close.
Mouth feel: Smooth, soft, quite full, with a little zesty carbonation.
Drinkability/notes: A very nice example, with a bit of a twist, being somewhat more aggressively hopped than many examples of the style. This would be an elegant presentation for a holiday dinner.
Presentation: Packaged in a 750 ml brown glass Belgian bomber with a pry-of crown, served in a New Belgium Brewing chalice.
