Served on tap in a snifter
Appearance- The beer was served a ruby color with a one finger head of white foam. The head fades fast, leaving a bit of lace on the sides of the glass.
Smell - The aroma of the brew was strongest of a cracker malt mixed with lots of plum and cherry. There is a bit of yeast and some toast and spice mixed in as well. With a touch of apple and bread, an overall slightly more malty dubbel aroma is produced overall.
Taste - The taste begins with a moderate roasted malt taste mixed with lots of cherry, plum, and raisin. While heavtly in fruit, the sweetness was lower, with the sweetness remaining low throughout. At the same time some yeast and a bit of a very light candy sugar flavor develops. Some slight grain and a bit of hay comes at the end, leaving one with a dry dubbel taste to linger on the tongue.
Mouthfeel- The body of the brew was medium in thickness and creaminess with a carbonation level that was higher. The feel was good for the style and made for a good easy drinker.
Overall - A slightly drier and easy drinking dubbel. Definitely a fun try.

Sweet, brown sugar, a bit fruity, delicious yeastiness, smooth carbonation, easy drinking. Overall a pretty good dubbel from a very good brewery.

Poured from a bomber into a tulip glass. Murky brown color with decent head and light lacing. Sweet appl has smell and taste. Fruity and a bit funky. A bit thin but overall pretty decent beer.

these guys really impressed me on my recent trip to texas, i liked all three beers i had from them, and this dubbel is a nice example of the style, definitely on the lighter side, but packing a pretty sturdy punch nevertheless, and probably a large format bottle i didnt need to solo drink late night, but whats done is done! different packaging than the others i saw from them too, a minimalist look, really attractive. the beer is paler in color than the dense molasses brown i am used to in the style, more of a hazy amber in my glass. a tall off white belgian head on it holds well, and it has all the richness in appearance that i like in something like this. a sort of bottle conditioned pep of life to it. aroma of dried apples and raisins, long boiled abbey malts, and a bit of brown sugar sweetness. the yeast is estery but not out of control, and has some neat fruitiness of its own, prune and dried currant come to mind. the flavor is nice, great balance, and more yeast character than i could smell, always more as it warms too, light peppery notes meet port wine fruitiness and caramelized grain sweetness, bready and full, but balanced for sure and quite interestingly layered. body is medium and oddly fast finishing for how rich this drinks, a light twangy sharpness works in helping to clear the palate at the end, and this seems well refined and old worldy to me, not cheap and generic like so many american made classic belgian styles. these guys are making some great beers, i liked all i had from them, and will keep an eye out for more next time. really killer american made dubbel here!
