i am coming around on simcoe. i used to be put off by its overly oily bitter properties, but have since seen it used more gracefully, and i think this is an excellent example of that. there is a very one dimensional malt base going on, pale two row from what i can tell, and i think thats a smart way to build this recipe. its simple, fresh, and light in flavor, which allows the simcoe to be showcased without having to dose it to high heaven. i see it more delicately here than i have in almost any other single hopped ipa, and i appreciate that. still has some piney resins to it, but the bitterness seems to be scaled way back from the normal, and there is a vegetal freshness i dont usually associate with simcoe. i almost want it to be more bold, but then it would go into familiar territory and turn me off im afraid, so as much as this is more of a pale ale than an american ipa, i like it for what it is. one of the better hoppy beers i had here this weekend. do they do other single hop versions? it would be cool if they were all this gently approached...

A - a very clear, filtered, run of the mill looking IPA. But with lighter malts it's hard to have much variance unless you use something more experimental. The hop is the highlight here, not the malt.
S - OH LORD. It's like, if I was a kid and there was some kind of powdered confection I could mix into a glass just to smell this I would have. Piney, resinous hops sting your nose in the best way possible.
T - My new go-to beer. For me, it hits all of the right notes: It essentially tastes like sappy pine wrapped in a cocoon of fruit and is just bitter enough to teater the edge of extreme hopped versus a more session-able hoppy beer (nevermind that ABV)
M - Extremely crisp and refreshing with a nice smooth carbonation that retains in the glass until it's gone.
O - This beer is the reason I keep coming back to two22. I'm not saying their other offerings aren't nice, but to me this kills Hop Abomination from Dry Dock (my other jam). Now, time to try that new dry hopped version :)
