Poured from a 12oz bottle into a snifter.
LOOK: Pours with a half finger's worth of khaki foam that halves itself after 20 seconds. So black in color, that it's difficult to make out the orange tint. There are both small and very small acending bubbles, but the quantity is subtle. There is a plethora of considerable sized, white particles (they look like small flakes) floating throughout the brew. I have no idea what they could be. Lacing is thin and very subtle.
SMELL: Strong aromas of funky yeast first pop out. Beneath those, lie mild caramel aromas and subtle aromas of figs, plums, black cherries, and alcohol.
TASTE: Intial taste consists of mild funky yeast and sour yeast (suddenly appear!) flavors. Subtle flavors of figs, plums, and black cherries enter immediately after as sour yeast flavors grow slightly stronger. Subtle caramel flavors finish off the final taste as all previous flavors persist.
FEEL: Full-bodied and moderately carbonated. Goes down smooth, yet also clings to the back of the throat like syrup. Finishes with the slightest hint of dryness.
NOTE: Not sure what NBBco was going for. I have loved thier other brews, but this one was disappointing. It didn't scream the dark fruit and caramel flavors like other Eisbocks. The sour and funky yeast flavors were just a strange addition to a style that shouldn't be altered too much. A great aspect, however, was that the 8.8% alcohol was nowhere to be found in the taste.
