really funky and really good stuff here. i know some of their wild beers have been hit or miss in the past, at least in my limited experience, but this one was awesome, one of my favorites of theirs i can recall ever having, brewed with local hay and their house funky culture. from the bottle it starts pretty clear golden, but before we even pour half of it into our glasses, it milks up and thickens pretty significantly with sediment. pretty fizzy white head at first, but that doesnt last long either, settling back to a think white film. aroma is awesome, super rustic to me, definitely not just brett, some clean lemony acidity on it makes my mouth water right away, and there is a belgian element to it as well, farmy and interesting, wild too, mature, unique, very attractive. not sure i taste hay in it, but there is a grassy drying late summery vibe that i allow to pass for it, lemony sourness, and nicely developed brett. more carbonation would definitely be welcomed here, but cool nuances of white wine, honey, green apple, raw wheat, and earthy spice along with the wild yeasts make it memorable and distinctive. i like the idea, i like the execution, and i like that its obvious these guys have improved this part of their portfolio since i got into their stuff last. really fun beer to share with my brother to kick off our vacation in texas!
