Chatty Monks Brewing "Crash Test #182 - IPA w/ Honey"
$10 / 32 fl. oz. crowler filled and sampled on 27 April 2019
Notes via stream of consciousness: "47 IBUS. BREWED WITH LOCALLY SOURCED HONEY FROM TINA MITCHELL OF MERTZTOWN, PA. HOPPED AND DRY-HOPPED WITH DENALI, COMET, AND SIMCOE TO CREATE A BLEND OF PINE AND DANK FLAVORS WITH NOTES OF BRIGHT CITRUS AND GRAPEFRUIT RIND." It's poured a hazy deep amber colored body beneath an inch and a half of off-white foam. The head is only very slowly settling and I'll probably have to wait a bit before taking a sip. In the meantime, it's citrusy, piney, and lightly malty with a hint of toasty nuttiness in the aroma. ... ... ... OK, that took some time, which indicates excellent head retention. Where the head once was is ringed with lace and I'm assuming that will continue throughout the glass. On to the flavor... well it's much more malty than I thought it would be given the aroma, and less hoppy as well. I don't think it has the strongest hop aroma, but the hops were clearly winning out over the malt whereas now they're on equal footing. They work quite well together but they aren't meshed together - not that that's a fault, that's just the way it is, sometimes you get malt at the start of the sip and sometimes you get hops but they always seem a little bit separate the whole way through. Again, that's fine, I'm just pointing it out. I'm getting fruity notes of apple, grapefruit, peach, and apricot. The Comet hops are quite clear, they're a fairly aggressive hop, and they're lending it grapefruit rind and a touch of spiciness right upfront. The peach and apple and apricot come at the swallow, and some passionfruit and pine rise up in the lingering, dry and bitter finish. It seems like more than 47 IBUs but then again that's pretty close to 50 so maybe that's right. Most people, including myself, can't detect IBUs within a range of 5 IBUs. Maybe what I'm finding is that the the hops are a little rough, rather than smooth, and to be honest, that's been my experience with Comet (not at all with Denali or Simcoe though). Back to the malt, and then the honey. Or maybe the honey right now. I get it, not strong, but it's there, and it works well with the biscuity, lightly caramelish, and softly nutty malt. Overall everything pulls together well in the end.
