an amazing beer from these guys, a blended wild brew with elderflower. it has to be the most fresh, natural, and pungent elderflower i have ever had in a beer, its insane, blooming and springy, almost feels like i should be allergic to it, full of pollen and just absolutely alive, incredible! the wild profile is neat too, more bretty than sour for me, but a good mix of critters at work here on a pretty simple wheaty type malt base. i think the flowers show up so well in part because the beer is so light, but it also has some body, its just low alcohol and dry, but it doesnt feel watery, even with the acidity thats here. subtle notes of white peach, fruity white wine, and lemongrass. the elderflower doesnt bring quite as much of the herbaceous bitterness that i usually associate with it, maybe just fresher or something, but the beer finishes bretty not bitter. cool farmy funk to it, a nice high carbonation, and a feeling of optimism after each sip, like the first crocus coming up in spring or something, winter is over, life returns and renews, it has that energy from the flowers, and i love it!
