a clever spiced saison here aged in red wine barrels i believe. bretty and funky with some more traditional belgian esters too, enough complexity in the yeast to support whatever extra ingredients are in here, herbs, peppercorns, citrus peel, its hard to fully tell, but there is at once a striking freshness and deep maturity to the beer, pretty cool back and forth there, and quite complex for something this drinkable. the dryness is cool, there is a fruitiness here, tangerine, grapefruit, meyer lemon, but also a light zizzle on the tongue that isnt just from acidity, some citrus bitterness later on too, oak tannins, and a really rustic brett profile. it has really lively carbonation, plenty of flavor after the swallow for being as dry as it is, and some decent grainy body, raw wheat and maybe some spelt or something giving in another layer. i have only had a handful of beers from these guys now, but they seem to be doing some really inventive beers that are real well put together, id love to get into some more of them. these recent few were both exceptional.
