KATAJA JUNIPER PALE ALE
Eric says: “Back in my homebrew days, I went down to Seattle for a weekend. At a brewery (can’t remember which) I had a beer that was inspired by a Finnish Sahti (it was clearly indicated that it wasn’t trying to replicate the traditional style). That beer left a mark on me so I went home and decided to create a recipe that was inspired by that beer (but not trying to clone it).
It was the first recipe that I ever designed from scratch. Previously I had only tweaked other people’s recipes to make them my own but this time I was starting from a blank slate. It was also the first recipe of mine that was brewed at S&O (not counting pilots). First brewed in early 2016 in bombers.”
WHAT SETS THIS BEER APART? WHAT'S NOTABLE?
Pilsner malt for the base with 20% rye malt for a spicy crispness and 10% oat flakes for a little body and complexity. A bit of light caramel malt to round it out and just a hint of roasted malt for colour.
Juniper berries are added to the boil for subtle gin-like notes while northwest hops bring a little citrusy balance.
